2:1 Veggie chilli - RL 4/10/23

INGREDIENTS:**
 g asda kidney beans (HCP added*)
 g Lentils, red, split, dried, boiled in unsalted water
 g Onions, raw
 g Chopped tomatoes in juice KTC (HCP added*)
 g Oil, olive
 g Creme fraiche, full fat
 g Spinach, baby, raw

Directions:


Boil lentils and weigh out desired portionAdd oil to pan
add finely chopped onion and saute till soft
add tinned tomato, boiled lentils and a pinch of taco/fajita/enchilada seasoning and bring to a boil
Add kidney beans and simmer for 5 minutes
Add chopped baby spinach and stir, turn off heat and serve with creme fraiche
