Green Pepper and Tomato Soup

 g KetoCal 4:1 LQ (Unflavoured)
 g Peppers, capsicum, green, raw
 g Garlic puree
 g Tomato puree
 g Oil, olive
 g Stock cubes, chicken
 g Water, distilled
 g Tomatoes, canned, whole contents
 g Cream, fresh, double, including Jersey cream


  1. Place pepper, garlic puree, tomato puree and oil into a pan and sweat for 4 mins.
  2. Dissolve stock cube in hot water.
  3. Add stock and canned tomatoes to vegetables and simmer for 10 mins.
  4. Add KetoCal LQ to the soup and heat for a further min.
  5. Blend until smooth.
  6. Add cream, to the top of the soup and serve.
