Green Pepper and Tomato Soup
g KetoCal 4:1 LQ (Unflavoured)
g Peppers, capsicum, green, raw
g Garlic puree
g Tomato puree
g Oil, olive
g Stock cubes, chicken
g Water, distilled
g Tomatoes, canned, whole contents
g Cream, fresh, double, including Jersey cream
- Place pepper, garlic puree, tomato puree and oil into a pan and sweat for 4 mins.
- Dissolve stock cube in hot water.
- Add stock and canned tomatoes to vegetables and simmer for 10 mins.
- Add KetoCal LQ to the soup and heat for a further min.
- Blend until smooth.
- Add cream, to the top of the soup and serve.
