MCT Mayonnaise

INGREDIENTS:**
g Egg, yolk (HCP added*)
ml MCT Oil
g Oil, blackcurrant seed
Directions:
1. Egg yolk and oil must be at room temp
2. Mix the 2 oils together in a jug
3. Place the egg yolk in a bowl (place a wet cloth under the bowl to help steady it), with a whisk add a drop of oil and whisk until the yolk turns a pale colour
4. Add the oil drop by drop whisking all the time until all the oil has been added (it will turn a pale cream colour and thicken)
5. Keep in a covered jar or tub in the fridge for up to 2 weeks
