Banana Muffin

INGREDIENTS:**
 ml MCT Oil
 g Bananas, flesh only
 g Flour, wheat, white, self raising
 g Almonds, flaked and ground
 g Eggs, chicken, yolk, raw
 ml Syrup, banana, DaVinci (HCP added*)
 g Baking powder, carb free, Barkat (HCP added*)
 g Eggs, chicken, white, raw

Directions:

  1. Preheat the oven to 180C/ fan 160C/ gas mark 4.
  2. Mix together banana, flour, almonds, MCT Oil, egg yolk, syrup (1tsp) and baking powder (1/8 tsp).
  3. Whisk egg whites until frothy and fold into mixture.
  4. Spoon into 2 lightly oiled silicone muffin moulds and bake for 20 mins.
